Potato Soup with Blackened Onions
4 lbs Potatoes 1/2 Onion 4 cubes chicken boullion little salt and pepper and nutmeg
Peel Potatoes and chop as thinly as possible.
Dice 1/2 onion
Cover potatoes with water plus about 2 inches. (You'll be adding more later)
Put in boullion
Boil for 20 minutes and then add more water.
Trick for soup - cook as long as possible
Soup will turn a bit yellow, this is good.
After 20 more minutes, add more water.
whisk soup to break up
To brown onions, it is always better to use butter than oil.
Brown over a low flame.
Add salt and pepper.
